Tropical Pineapple Fruit Boat (Printable Version)

01 - 1 ripe pineapple
02 - 1 kiwi, peeled and sliced
03 - 1 mango, peeled and diced
04 - 1/2 cup strawberries, hulled and quartered
05 - 1/2 cup seedless grapes, halved
06 - 1/2 cup blueberries

→ Dressing & Garnish

07 - Juice of 1/2 lime
08 - 1 tablespoon honey or maple syrup
09 - Fresh mint leaves, for garnish

# Directions:

01 - Slice the pineapple in half lengthwise, keeping the leaves attached for presentation.
02 - Using a paring knife, cut around the edge of one pineapple half, leaving about 1/2 inch border. Carefully cut the flesh into cubes without piercing the skin, then scoop out the cubes with a spoon.
03 - Remove and discard the core from the pineapple cubes.
04 - Add the kiwi, mango, strawberries, grapes, and blueberries to the bowl with the pineapple cubes.
05 - In a small bowl, combine the lime juice and honey or maple syrup. Drizzle over the mixed fruit and toss gently to combine.
06 - Spoon the mixed fruit salad back into the hollowed pineapple half, mounding it attractively.
07 - Garnish with fresh mint leaves and serve immediately.
