# Directions:
01 - Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add sliced Cajun sausage and cook for 3 to 4 minutes, turning until browned on both sides. Remove sausage and set aside.
02 - Add remaining 1 tablespoon olive oil to the skillet. Stir in diced sweet potatoes and cook for 8 to 10 minutes, stirring occasionally, until starting to soften and become lightly golden.
03 - Mix in the diced red and green bell peppers, red onion, and a pinch of salt. Sauté for 5 to 6 minutes until vegetables are tender.
04 - Stir in minced garlic, Cajun seasoning, smoked paprika, black pepper, and cayenne pepper if desired. Cook for 1 minute to release aromatics.
05 - Return the browned sausage to the skillet and combine fully. Cook for an additional 3 to 4 minutes until sweet potatoes are fork-tender and flavors meld.
